Andrea Lynn's Jammy Quail Egg in a Nest Pancake

Andrea Lynn from @the.paperplategourmet dreamed up the breakfast upgrade you didn't know you needed. Fluffy, cinnamon-spiced pancakes get a hole punched right in the center — then a Spring Creek quail egg cracks in and cooks until the whites are just set and the yolk stays perfectly jammy. Spoon hot butter over the top, stack them up, and finish with maple syrup. Weekend mornings just got a whole lot more exciting.
Ingredients
- 2 cups pancake mix, prepared as directed
- 2 tsp vanilla
- 1 tsp cinammon
- Pinch of nutmeg
- 10 Spring Creek quail eggs
- 1/4 cup butter, plus extra for serving
- Maple syrup, for serving
Instructions
Prepare pancake mix as directed on the package, stirring in the vanilla, cinnamon, and nutmeg.
In a nonstick pan over medium heat, melt a small knob of butter, then cook the pancakes as directed.
Just before each pancake is done, use a small shot glass or round lid to cut a hole in the center.
Crack 1 quail egg into the hole. Season with salt and pepper.
Reduce the heat to medium-low and cook for about 2 minutes, spooning hot butter over the egg whites until set and the yolk is jammy.
Serve immediately with butter and maple syrup.
